Creamy Acai Bowl with Added Protein
The perfect post workout meal!

The acai berry (pronounced ah-sah-ee) is a small purple berry found on the large palm trees that grow within the amazon rain forest. Unfortunately, unless you live in Brazil, this berry is not available in your local supermarket. The berry is extremely perishable and usually spoils within 24 hours of being harvested. Luckily they can be preserved using several other methods, such as freezing and freeze drying. Therefore stores in the U.S can sell supplements, juice, extracts and powders. I prefer Vitamin Shoppe’s acai berry powder, it is easy to get and they offer it at a great price!
This little berry not only tastes fantastic but also has a bunch of health benefits! It is full of omega fats, amino acids, electrolytes, antioxidants, protein and vitamins A, B1 and E. Scientific evidence has proven that acai contains several key ingredients that suppress appetite, increase metabolism, detoxifies the body and helps build muscle tone. What’s better is the acai berry is naturally low in sugar which makes it safe for diabetics as well!
This recipe might seem like a lot of calories but you will be amazed by how filling it is! I added the extra dose of protein to not only make it creamier and sweeter but also for us vegetarians that can always benefit from a little extra protein.
I hope you enjoy
4 Large Strawberries
4 tbsp shaved coconut
½ cup granola
1 cup apple juice
1 scoop vanilla protein powder
1 scoop dried acai powder
¼ cup frozen mixed berries (I like trader joe’s very berry cherry blend which is a mix of raspberries, cherries, blackberries and blueberries)
1 packet truvia (optional)
Cut banana and strawberries into slices. Put half of the cut up banana and strawberries into the bottom of a large bowl or tall glass. Top with 2 tbsp of shaved coconut and ¼ cup granola. Set the remaining coconut, granola and cut up fruit aside.
Throw apple juice, protein powder, acai powder, mixed berries and truvia in a blender with a few cubes of ice. Blend until thick and creamy. Make sure it is not too loose!
Pour mixture into prepared bowl and top with remaining mixed fruit, coconut and granola. Enjoy with spoon!
